Preheat your oven to 350°F. Lightly grease a 9x13-inch baking dish.

Cook the pancetta (or ham) if uncooked.

Arrange the frozen hash brown patties in the bottom of the prepared dish in a single layer.

Sprinkle the Gruyère, Swiss, diced pancetta (or ham), and chopped scallions evenly over the hash browns.

In a large mixing bowl, whisk together the eggs, milk, salt, pepper and garlic powder until fully combined and slightly frothy.

Pour the egg mixture evenly over the hash brown and cheese layer.

Cover the dish with foil and bake for 30 minutes. Remove the foil and continue baking for another 30 minutes, or until the edges are golden and a knife inserted into the center comes out clean.
