My daughter watched ratatouille for the first time My daughter watched ratatouille for the first time and was so inspired to learn to cook so of course we had to start with this dish! It looks impressive but it’s surprisingly simple to make. Steps below:

Ingredients

• 2 Asian eggplant (thinly sliced)
• 2 zucchini (thinly sliced)
• 2 yellow squash (thinly sliced)
• 3 Roma tomatoes (thinly sliced)

For the base

• 2 tbsp olive oil
• 1 red bell pepper, diced
• 1 small onion, diced
• 5 garlic cloves, minced
• 1 large can crushed tomatoes
• 4 sprigs fresh thyme
• salt & black pepper

Quick Method

1️⃣ Preheat oven to 375°F.
2️⃣ In a braiser or Dutch oven, sauté onion and bell pepper in olive oil until soft.
3️⃣ Add garlic and cook about 30 seconds.
4️⃣ Stir in crushed tomatoes and thyme and simmer 8–10 minutes. Spread sauce evenly across the bottom of the pan.
5️⃣ Thinly slice eggplant, zucchini, squash, and tomatoes.
6️⃣ Arrange slices tightly in an overlapping pattern over the sauce, alternating vegetables for color.
7️⃣ Season lightly with salt and pepper and drizzle with olive oil.
8️⃣ Cover and bake 40–45 minutes, then uncover and bake 15–20 minutes more until vegetables are tender and silky.
Serve warm with crusty bread or alongside roasted meats.

Does anyone know what went wrong? This was my firs Does anyone know what went wrong? This was my first loaf. It was hard as a rock from the outside and pretty chewy inside. Sourdough is a complex process and I’m wondering if it’s worth the effort.  Please share your thoughts!
