This recipe is the result of a lot of trial, error, and success. It starts with a good beef rub — we love using Meat Church Holy Cow, but anything with a bold mix of pepper, salt, and garlic will do. Let it marinate for a few hours or even overnight for maximum flavor.
The smoking process is simple: low and slow at 250–275°F. After about an hour, you’ll want to check the internal temp. Pull it at 130°F for medium, then let it rest (don’t skip this part!) before slicing. That rest time makes all the difference.

One of the most important tricks is slicing it correctly. Tri-tip has two different grain directions, so you’ll want to cut it in half first, then slice each half against the grain for tenderness in every bite.

Season the tri-tip
Pat the tri-tip dry. Generously coat all sides with your beef rub. For the most flavor, season at least 2 hours before cooking — but overnight in the fridge is ideal. -
Preheat your smoker
Set the smoker to 250–275°F. Let it fully preheat before adding the meat. -
Smoke
Place the tri-tip directly on the smoker grates. Let it smoke for about 1 hour, undisturbed. -
Check internal temperature
After the 1-hour mark, begin checking the internal temp. For medium, pull the tri-tip when it reaches 130°F in the thickest part. -
Rest
Remove the tri-tip from the smoker, tent it with foil, and let it rest for at least 20 minutes to lock in the juices. -
Slice correctly
Cut the tri-tip in half where the grain changes direction, then slice each piece against the grain into thin strips. -
Serve
Plate it up and enjoy — no sauce needed when it’s this juicy and flavorful.
